Yup- all three of those ingredients together make for an amazing summer salad, and it's super easy! Ever since I woke my grill from its winter nap I've been making this salad weekly. I even use the grill to cook up my bacon (WARNING!!! I only throw 2-3 pieces of pig on the grill at a time to prevent a serious raging grease fire (duh!)). The flavor that comes from grilling it makes it taste like summer (don't you know what that tastes like??). Besides that, it makes anything I cook on the grill after that taste like bacon too!
Ingredients:
-Asparagus (I used a pre-packaged bundle from Trader Joe's)
-Strawberries (I used about half a basket)
-Bacon (Nitrate free!)
-Olive oil
-Balsamic vinegar
-Salt
Instructions:
Trim tops and stiff bottoms off the asparagus and then cut it into 1-2 inch pieces. Throw it in a grill basket and lightly drizzle it w/ the olive oil, balsamic vinegar and salt. Place over medium high heat for about 10 minutes, shaking or stirring it once or twice. You can cook the bacon during this time either on the stove or on the grill next to the basket. While the bacon is crisping, slice the strawberries. To serve, toss all ingredients in a bowl and drizzle with just a bit more balsamic vinegar and BAM! You have Grilled Asparagus-Bacon-Strawberry Salad.
